This smoothie tastes just like an apple pie, it’s such a refreshing smoothie and a great way to start the day. It has a lovely creamy consistency and is packed with fibre and healthy fats.
I’ve used golden flaxseed meal in this recipe but regular flaxseed meal is fine to use (the smoothie will be a little darker). Flaxseed is very low in carbohydrates, making it ideal for people who limit their intake of carbs and is rich in Omega-3 fatty acids.
Serves: 1 | Prep Time: 00:05 | Cooking Time: 00:00
Ingredients
- 1 med – lge apple(s), core removed and roughly chopped
- 1 Medjool date(s), pitted
- 250ml coconut milk, from carton (if using canned milk water down)
- 2 Tbsp golden flaxseed meal (fine ground)
- 1 Tbsp almond butter/spread
- 1 tsp cinnamon
- 1/2 tsp mixed spice
- 1/2 tsp vanilla extract (organic)
- Pinch of fine sea salt
- 1 cup ice cubes
Directions
Add all the above ingredients into a blender.
Blend on high until smooth.
Pour into a glass and sprinkle with a little cinnamon.
Allow the smoothie to sit for a couple of minutes before consuming, the flaxseed meal will soak in the liquid and the smoothie will become quite thick.
